Ingredients

500g beef for stew (like gravy beef, diced beef, or beef cheeks)

1 onion, chopped small

2 carrots, chopped small

1 big garlic clove, chopped

1 teaspoon thyme leaves

2 tablespoons tomato paste

3/4 cup red wine
-
2 cups veggie broth
-
1 can chopped tomatoes (400g)

2 cups sliced mushrooms (or small whole ones)

Plain flour

Salt and pepper

To serve: Boiled small potatoes, fresh crusty bread, and butter
Boeuf Bourguignon: Directions

Sprinkle salt, pepper, and flour on the beef. Brown it in a bit of olive oil, then put it in the slow cooker.

In the same pan, cook onion, carrot, and garlic for 1 minute. Add thyme, tomato paste, and red wine. Scrape up all the good bits from the pan, then add everything to the slow cooker with the beef.

Pour in the canned tomatoes and broth. Stir it all up well.

Cook it on HIGH heat for 4 hours (or LOW flame for 8 hrs).

Add mushrooms and cook on HIGH for 45 more minutes.

Serve with boiled small potatoes, crusty bread and butter, and leftover wine if you have some. Dig in!
