Ingredients

  • 500 g ground beef mince

  • 1 can refried beans, 435 g

  • 1 packet taco seasoning powder, 35 g

  • 4 ripe tomatoes, diced

  • 5 tortilla wraps

  • About 2 cups grated tasty cheese

  • Ground paprika

Mexican Beef Tortilla Stack: Instructions

  1. Put the beef mince, refried beans, taco seasoning, and diced tomatoes into a slow cooker.

  2. Mix everything together well.

  3. Cook on low for about 4 hours.

  4. When the meat mixture is ready, start building the tortilla stack.

  5. You can use an oven dish if you do not have a small slow cooker. I used the bowl of a 3 L slow cooker.

  6. Place one tortilla wrap on the bottom.

  7. Add about 1/5 of the meat mixture on top.

  8. Sprinkle about 1/3 cup of grated cheese over it.

  9. Put another tortilla wrap on top and press it down gently.

  10. Add another 1/5 of the meat mixture and another 1/3 cup of cheese.

  11. Keep layering the tortillas, meat mixture, and cheese until everything is used.

  12. On the last layer, add about 2/3 cup of cheese on top for extra cheesy flavor.

  13. Lightly sprinkle a little ground paprika over the cheese. This helps the cheese look a bit browned while cooking.

  14. Cover and cook on high for about 45 minutes, or until it is hot and the cheese has melted.

  15. If you are using an oven dish instead of a slow cooker, bake it in a moderate oven for about 30 minutes, or until hot and the cheese has melted.

  16. Cut into slices and serve with fresh garden salad.
