2 large onions, sliced

1 kg beef, diced

2/3 cup massaman curry paste

1 cup light coconut milk

1 cup chicken stock

3 medium potatoes, cut into large chunks

2 carrots, diced

1 cup green beans, cut in half

2 tablespoons brown sugar

1 tablespoon fish sauce

1 cup raw cashews or peanuts
Thai Beef Massaman Curry: Instructions

Heat some oil in a pan. Add the curry paste and stir it for 1 minute until it smells nice.

Put the cooked paste into a slow cooker.

Add all the other ingredients except the brown sugar and fish sauce.

Mix everything well.

Cook it on low flame for 8 hrs or on high heat for 4 hours.
