Sauce

200 ml chicken stock

3 tablespoons peanut butter

140 ml coconut milk

2 tablespoons soy sauce

1 teaspoon brown sugar

2 teaspoons corn flour

2 teaspoons crushed ginger

2 cloves crushed garlic
For later

1 red capsicum, sliced
-
4 spring onions, cut diagonally

1 brown onion, cut into wedges
Beef
-
500 grams slow cook beef, diced (rump, chuck, or round)

3 tablespoons corn flour
-
2 teaspoons olive oil
Chinese Satay Beef: Instructions

Put the beef and 3 tablespoons of corn flour into a freezer bag. Twist the top shut and shake gently until the beef is coated. Let it sit for 10 minutes.

In a different bowl, mix all the sauce ingredients together. Set the bowl aside for now.

Heat the oil and brown the floured beef for up to 5 minutes.

Move the beef into your slow cooker.

Add the onion wedges and sliced capsicum.

Pour the satay sauce over everything.

Put the lid on and cook on LOW for 3 hours.

Add the spring onions and stir.

Put the lid back on and cook on LOW for 1 more hour.
