Apricot Chicken in the Slow Cooker

Apricot Chicken in the slow cooker – tried a different flavour combo and was amazing.
Chicken soo tender and no leftovers so I’m happy 

INGREDIENTS:

6 thighs or drumsticks (I used 3 of each to be exciting) skin on or off – I only could get skin off thighs today but worked perfectly fine
salt and pepper to taste
2 teaspoons olive oil
1 onion thinly sliced
1 cup apricot jam
2 tablespoons soy sauce
1 tablespoon dijon mustard
1 teaspoon minced fresh ginger
2 tablespoons chopped parsley to garnish

Apricot Chicken in the Slow Cooker

Directions:

Make sauce by mixing jam, mustard, soy, and ginger
Brown chicken in pan about 5 mins each side
Add onions to pan about 5 mins till softened
Throw chicken and onions into slow cooker
Pour sauce over

Cook on high for 4 hours
Serve with jasmine rice and/or mash potato and garnish with parsley

Was about 4 large serves.

Slow Cooker Beef stew!

I don’t know about everyone else but mine seems to change every time I make it 

I probably put too many carrots in just because we love carrots!!

Ingredients:

Diced beef (just a small pack)
Tin of new potatoes (because I was too lazy to peel and chop spuds)
Too many carrots (peeled and chopped)
A full onion
2 cloves of garlic
2 sticks of celery
Beef Stock pot (knorr) you can just use a stock cube!
2 big bay leaves
Pepper
Half a cup of mulled wine left over from Christmas
I teaspoon of balsamic vinegar
Tablespoon of mixed herbs

Method:

Cover with boiled water
Cook on low for 8 hours.

When it’s done I tip it in to a big pan sprinkle a low salt beef oxo (stock cube) stir it all in and reduce it until it looks like this!
