Slow Cooker Beef & ale stew Recipe

Ingredients:

Beef chunks 800g (approx 3cm pieces)
1 onion diced
1 leek chopped in 1/2 moons
4 carrots cut into chunks
200g bean mix
500ml ale (avoid light ale)
200ml beef stock
Cornflour 4tbsp
Garlic 2 cloves crushed
Salt
Pepper
Thyme 2tsp
Wholegrain mustard 2tsp
Tomato puree 2tbsp
Sugar 2tsp
Worcestershire sauce
Oil
2 Bay leaves
1 beef oxo

Beef & ale stew Recipe

Directions:

Brown beef in a little oil
Drain any fat, put in a bowl, season well & add 1 tbsp of cornflour to coat
Add to slow cooker
Using the same pan add the onion for about 5 minutes, then garlic for another minute & also add that to the sc
Put the ale in the same pan, heat on high for a few minutes to cook off the alchohol & put to 1 side
Add the carrots, leeks & green beans to the slow cooker..
For the beans I defrosted 200g of mixed broad beans, green beans & peas but you can use fresh or tinned
Add the remaining 3tbsp of flour, thyme, sugar & stir to coat evenly

Add the ale, beef stock, tomato puree, bay leaves & crumbled oxo, give a good stir & cook of high for 4 hours or low for 6
Once cooked, season to taste & add a splash of worcestershire sauce
Served with yorkshire puddings & mash. It was delicious.
