Beef Bourginon in the Slow Cooker
Ingredients:
200g smoked bacon, chopped
1kg diced beef
250ml red wine
2 red onions or shallots, chopped
1 tbsp low-fat butter
handful of fresh thyme.
handful of fresh rosemary, chopped
2 bay leaves
450g mushrooms (left whole)
1 tbsp cornflour, mixed to a paste with 1 tbsp water
1 beef stock pot
3 carrots, chopped
4 garlic cloves, crushed
1 tbsp tomato purée
salt and pepper, to taste
chopped fresh parsley, to garnish
Directions:
1 If you have time, heat a nonstick frying pan over a high heat on the hob, then place the bacon and beef in the pan and sear until just browned all over.
2 Place the bacon with all the remaining ingredients in the slow cooker, stir and season to taste. Cook on low for 7-8 hours. Garnish with parsley.
