Cheesy Egg & Potato Slice

Ingredients:

8 large eggs
250g grated cheese
Generous splash of milk
1 large handful of frozen peas
Three bell peppers finely sliced
1 tin sweet corn
3 finely sliced red onions
1 medium potato very thinly sliced

Cheesy Egg & Potato Slice

Directions:

I mixed all the veg in one bowl. Whisk eggs with milk in a separate bowl with a pinch of salt and pepper. Add veg and cheese to whisked eggs. Save some cheese for the top! Fry light/ oil on the slow cooker … Pour eggs and veg into the slow cooker. Layer the potato over the top. Sprinkle some cheese over the top. Place the lid on with a tea towel under – put high for 3.5 hours! Let cool for 20 mins. Run knife round the edge. Put a plate on top and flip out of the slow cooker 😃
