Mexican style pulled chicken

Mexican style pulled chicken. Served it up with rice, cheese and some sour cream! Beauty

serves 3/4

Ingredients:
2 Red peppers

1 can red kidney beans
(I added handful of chopped greens beans)
1 can tinned tomatoes
2 red onions
1 pint of chicken stock (add more if needed)
1 packet of preferred fajita/taco seasoning
3/4 chicken breasts

Method:

Chop all veg and add to the slow cooker. Add in chicken breast, tomatoes, taco seasoning and stock. Season with salt and pepper.

Cook on medium heat for 6-8 hours. Once done, shred chicken on a plate and add back in, along with your can of red kidney beans.

If needed, you can thicken slightly with corn flour at the end!
