Slow Cooker Pulled Chicken

 4kg of Slow Cooker Pulled Chicken on the go.

Ingredients:

3 Large Red Onions – Thinly sliced
2kg Chicken Breast Fillets
3kg Chicken Thigh Fillets
1Ltr Tomato Sauce
¼ Cup Apple Cider Vinegar
¼ Cup Blackstrap Molasses
5 Tbs Dijon Mustard
5 tsps Onion Salt
5 tsps Ground Cumin
2 Tbs Minced Garlic

Method:

1. Layer alternate layers of chicken and onions into slow cooker
2. Combine all other ingredients and pour over chicken, allowing it to trickle down thru the layers
3. Cook on high for 6hrs, gently stirring occasionally
4. Skim off any impurities that settle on the top
5. Remove chicken and shred with two forks, while leaving the SC on High with lid off.
6. Add shredded chicken back to sauce in SC, and keep warm until serving

Serve either neat or in slider rolls with some zesty coleslaw, corn cobs, hot chips, or whatever you fancy! NOM NOM NOM!

NOTE: This freezes really well
