Slow Cooked Massaman Chicken Curry

Hi guys as it’s a public holiday in Qld I thought I would make my version of slow cooked massaman chicken. The smell that is coming out of my house is amazing 🙌 🙌
I added heaps of veggies for the kids so fingers crossed it tastes yummy.

Ingredients:

1kg chicken thigh
2 jars of massaman paste
1 tblsp oyster sauce
1/4 peanut butter (I use smooth)
sweet potato diced
Butternut pumpkin diced
4 large carrots diced
400 g coconut cream
1 lemon juice
1 tblsp brown sugar
Bunch of spring onion
1 zucchini

Directions:

I fry off the paste till it smells amazing, then add the oyster sauce, peanut butter, lemon juice, brown sugar. I then add the diced chicken and brown it off then I add the coconut cream.
Then add some spring onion and put it on low for 6-8hrs

30 minutes before it’s ready I add the diced zucchini and serve it on a bed of basmati rice
