Ingredients

  • 12 chicken pieces (thighs and drumsticks, 2 per person)

  • 1 big onion, chopped up

  • 8 small mushrooms, chopped

  • 1 tablespoon chopped garlic

  • 4 small potatoes, cut into quarters

  • 2 cans crushed tomatoes

  • 1/4 cup tomato paste

  • 1/2 cup red wine

  • 1/2 liter chicken broth

  • 1 tablespoon each fresh chopped basil and oregano

  • 1/2 cup black olives (whole or sliced)

  • 2 tablespoons Worcestershire sauce

  • Salt and pepper to taste

Instructions: Chicken Cacciatore

  1. Heat a pan and brown the chicken pieces. (Skip if short on time, but add a splash of broth after to scrape up yummy bits and pour into the crockpot.)

  2. Chop the onion, mushrooms, and potatoes.

  3. Put chicken and potatoes at the bottom of your slow cooker.

  4. Pour all other ingredients on top.

  5. Stir gently to mix it all.

  6. Cook on low for 6-7 hours, until chicken is soft and cooked.

  7. If sauce is thin, mix cornflour with water and stir in 30 minutes before done. Or pop it in the oven to thicken.

  8. Serve hot over cheesy polenta or pasta.
