Christmas Fruit Cake Recipe

 Slow Cooer Christmas Fruit Cake recipe. Definitely turned out great . It took over 8 hours but it is cooked well and smells amazing. I will wrap it in more greaseproof paper and put it in a proper tin in a cool place. After a week I will follow my grandmas instructions of turning the cake over make about eight holes with a scewer and feed it with alcohol . She did this weekly to preserve the cake. I won’t be putting to much in as it’s already got baileys in the mixture.

Ingredients:

1kg luxury brandy soaked fruit
9 floz chocolate milk
5floz baileys
Soak the fruit for 24 hours in the liquid
Weigh out
250grms of brown sugar and the same amount of unsalted butter and self-raising flour
Whisk 4 eggs.

Method:

Cream together the butter and sugar gradually adding the flour eggs lastly stir in the soaked fruit and you mix it in well).
Put it in a grease proof lined tin . Put water in the slow cooker not to much and don’t let water get on the cake tin make sure it’s sat on something like an upturned plate or foil balls I have a special tripod my husband adapted . Put the tea towel under the lid then on high for 2 hours low 6 hours. Don’t keep taking the lid off.
