The curried sausages that were the best ever! This recipe is easy and warm. The sausages cook slowly in a tasty curry sauce. Carrots, onions, and peas add color and flavor. It is great with mashed potatoes.

Ingredients

  • 2 tbsp olive oil

  • 8 sausages of your choice

  • 1 large brown onion sliced

  • 1 large carrot diced

  • 2 tsp curry powder (or more or less to individual taste)

  • 1/2 cup chicken or beef stock – again this is a matter of choice, I have used them both and they are equally well as the other.

  • 1 cup water

  • Some frozen peas

  • 1 tbsp cornflour

  • 2 tbsp water

  • Salt and pepper to taste

Curried Sausages: Instructions

  1. Brown sausages – not an essential just my own choice of course – and cut into whatever size you wish, then add to slowcooker.

  2. Add the onion and carrot raw.

  3. Add the stock and water into the sausages and then combine the cornflour, curry powder and the additional 2 tablespoons of water in a small cup( a.k.a cornflour slurry).

  4. Combine the cornflour mix with the s.c and blend.

  5. Cook it for 3 hours on high heat or about 6 hours on low heat.

  6. Test the seasoning and salt and pepper to taste.

  7. I never really add my frozen pea until it is time to eat. They do not lose their colour or their texture and the heat in the bowl cooks them nearly immediately.

  8. Mine is served with mash potato, and this is the real curried sausages! And a good shiny dressing to your potatoes.
