Easy Slow Cooker Chicken Soup. A cozy, simple soup you can make with almost no work! Just toss chicken, veggies, and soup mix into your slow cooker in the morning, and come home to a warm, tasty dinner. It’s perfect for busy days and tastes amazing with crusty bread rolls on the side.

Ingredients

1–2 kg chicken wings or drumsticks
500g packet of frozen mixed vegetables (peas, corn, and carrots work great — McCain brand is a good choice)
1 onion, chopped into small pieces
40g packet of dry chicken noodle soup mix
2–3 tablespoons chicken stock powder (use a low-salt kind if you like — Massel brand works really well)

Easy Slow Cooker Chicken Soup: Instructions

Put the chicken pieces into the bottom of your slow cooker bowl.
Add the frozen mixed vegetables and chopped onion on top of the chicken.
Sprinkle the chicken stock powder and dry soup mix evenly over the top.
Pour water into the slow cooker until it reaches about 2 inches below the top edge of the bowl.
Give everything a gentle stir so the stock powder and soup mix spread out evenly.
Put the lid on and cook on low heat for 8 hours. This is a great recipe to start in the morning and let cook all day while you’re busy.
When the soup is done, carefully take the chicken pieces out of the pot and place them on a plate or cutting board.
Let the chicken cool for a few minutes, then pull the meat off the bones using a fork or your fingers. Throw away the bones.
Put the chicken meat back into the pot and stir it into the soup.
Ladle the hot soup into bowls and serve right away with crusty bread rolls.
