This chicken soup recipe is one I go back to again and again. It’s the kind of meal you can start in the morning and forget about until dinner time. Just toss everything in the slow cooker, head off to work or run your errands, and come home to a warm, cozy soup that tastes like you spent hours in the kitchen — even though you barely lifted a finger!

Cook Time: 8 hours

- 1 onion, chopped into small pieces
- 40g packet of dry chicken noodle soup mix
- 2 to 3 tablespoons chicken stock powder (use the low-salt kind if you like — Massel brand is my favorite!)
Fast & Easy Chicken Soup: Instructions
- Add the chicken and veggies. Put the chicken pieces and frozen vegetables into the bowl of your slow cooker.
- Mix in the flavor. Add the chicken stock powder and the dry soup mix. Stir everything together well.then pour in water until it reaches about 2 inches below the top edge of the slow cooker bowl.
- Let it cook low and slow. Turn the slow cooker to low heat and let it cook for 8 hours. This is perfect for a busy day — just set it and go about your day while it cooks!
- Shred the chicken. When it’s time to eat, take the chicken pieces out of the pot. Pull the meat off the bones and throw away the bones. Put the chicken meat back into the pot and give it a good stir.
- Serve and enjoy! This soup is so quick to put together — under five minutes with the frozen veggies doing the heavy lifting. Serve it hot with crusty bread rolls for a truly delicious meal.
