Slow Cooker Greek Lamb Kleftiko
You’ll need:
– Leg of lamb/shoulder of lamb 🐑
– 6 Cloves of garlic 🧄
– 4 Large vine tomatoes
– 1 pound of baby potatoes or 4 large potatoes diced into 4.
For the marinade:
– 1 tsp Salt and pepper each
– 4 tsp Fresh lemon.. or lemon juice
– 5 tbsp oregano (or mixed herbs, as you like)
– 2 cloves garlic minced
– 1 tsp tomato purée (or sauce, as you like)
– 2 tsp balsamic vinegar (or normal)
– 7 tsp olive oil
– 3 tsp garlic granules
– 3 tsp basil
Directions:
First season your lamb with salt and pepper.
Then combine the ingredients to make the marinade for the lamb, it should look like the picture below.
Then make thin slices into your lamb and add whole garlic cloves, like the picture below.
Add a little splash of olive oil to the bottom of your slow cooker, dice your potatoes and tomatoes, then add to your slow cooker!
(I ran out of potatoes so I just used tomatoes😂)
Season your diced potatoes and tomatoes with salt and pepper.
Add the lamb on top of the veg, you can brown it but I didn’t.. after this rub the marinade all over the skin of the lamb.
Cook on low for 8 hours!
Then.. enjoy.
I eat this dish sprinkled with feta cheese, chips salad and Greek yoghurt on the side. 😍
