Ingredients

1 Leg of lamb

4 peeled and chopped carrots

5 medium peeled and chopped potatoes.

1 cup of frozen peas

1 cup of frozen chopped onion

250mls of chicken stock

1 can of chopped tomatoes

1 can of cream of mushroom, condensed.

1 pkg French onion soup mix (dry)

Splash of mixed herbs

Salt & pepper to taste

Corn flour (2 tablespoons), required to thicken.

Lamb Casserole: Instructions
Cook the Casserole
Put all the ingredients in slow cooker on low, leave it for 8 hours.
Prepare Thickening
Thickening, where necessary, 30 minutes before serving, prepare 2 tablespoons cornflour with 2 tablespoons of cold tap water and stir until a smooth paste and add to lamb casserole.
Cook Again
Turn lamb casserole on high and leave it for another 30 minutes.
Serve
Serve on a bed of mash potato
