Mongolian Beef in the Slow Cooker

Mongolian Beef in the slow cooker

Not one to toot my own horn but this Mongolian Beef was AWESOME! Definitely one of my favourites 😊

Ingredients:

700g beef steak – I used blade steak (trimmed of fat), cut into stir fry sized strips.
1/4 Cup of Corn flour
2 Tablespoons of Olive Oil
1/2 Teaspoon of Minced Ginger
2 Cloves of Garlic – Crushed
3/4 Cup of Soy Sauce
3/4 Cup of Water
1/4 Cup (40g) of Brown Sugar
1/2 Cup of Shredded Carrot
3 x Spring Onions chopped (I used 2 full ones & then the white part of perhaps another 3).

Method:

Spray Cooker with non stick oil
Roll beef in corn flour & add to the slow cooker
Combine all other ingredients into a bowl & pour over the beef.
Cook on Low for 4-5hrs (I cooked mine for just over 4).
It was so moist & the meat was very tender!
Serve with stir-fried vegetable and steamed rice.
