Slow cooker garlic and herb cocktail potatoes!

Ingredients:

– 1kg cocktail potatoes cut in half (or leave whole if tiny)
– 4 cloves fresh minced garlic
– 3tbsp olive oil
– shake of dried chives
– 4 small sprigs fresh rosemary (remove at end)
– salt/pepper
– 2tbsp butter dotted around on top

Direction:

6-8hrs on low (check). Stir through fresh parsley at end 😎

Can leave out fresh garlic and use garlic-infused olive oil for low FODMAP option.

Question….. What size cooker is this? I’ve a 6.5lt worried it will be too big.

Answer…… this is a 5.5L but it works fine.

Question…… Did you put any water in with them or pre boil them?

Answer…… No water or pre-boiling. Used cocktail potatoes and any that were larger than a golf ball I chopped in half.

Question…… Could you have this cold like a potato salad?

Answer……… id say so! Once they cool, pop on a plate and drizzle with aioli and fresh parsley. Serve with salad and quiche or smoked salmon 😋
