Peanut Satay

Peanut Satay. This yummy Peanut Satay is super mild and tasty, perfect for kids! Tender beef swims in a creamy peanut sauce with coconut and veggies. Just toss it all in a slow cooker for easy cooking. Serve over rice or noodles for a fun family dinner everyone loves. No spice overload!

Ingredients

  • 2 Tbsp sweet chilli sauce

  • 1 Tbsp ginger

  • 1 tsp coriander

  • 1 Tbsp garlic

  • 1 Tbsp fish sauce

  • 1 cup crunchy peanut butter

  • 400ml coconut cream

  • 500g frozen stir fry veg

  • 500g diced beef

  • 1 Tbsp sugar

  • 2 Tbsp soy sauce

  • 1 spring onion sliced

  • Salt and pepper to taste

Peanut Satay: Directions

  1. Put everything except the veggies in the slow cooker. Set it on low for 4-5 hours, until the meat gets soft and tender.

  2. Add the veggies and cook on low for one more hour.

  3. Serve it over your favorite rice or egg noodles.

  4. This makes a mild satay. For more zing, swap sweet chilli sauce for real hot chilli.
