Slow Cooked Lamb Shanks for dinner….
Not wanting to brag or anything, but I could definitely hear angels singing when I served up tonight’s dinner to my family. If you are the lover of a juicy, slow cooked lamb shank, then read on…….
Ingredients:
4 lamb shanks
1 large brown onion sliced chunky
4 large carrots, peeled and cut into quarters
8 whole baby potatoes, skin on
1 x 700gm bottle of passata (I used Val Verde brand)
1 tablespoon minced garlic (I used store bought in a jar – The Food Company)
3 beef stock cubes (I used Massel brand)
Lamb herbs to taste (I used Masterfoods brand)
Chilli flakes to taste (I used Masterfoods brand – optional)
400gm sliced mushrooms

For serving:
Soft goats cheese
Chopped continental parsley
Crusty sourdough bread

After plating up, top with dollops of the soft goats cheese and sprinkle with chopped parsley.
Serve with crusty sourdough bread on the side.

Nothing was pre cooked. Everything, except the mushrooms (and goats cheese, parsley and bread) was thrown into the slow cooker on low for 8 hours IN TOTAL. The mushrooms were added and stirred through in the last hour of cooking. No tea towel under the lid. No thickening of sauce required as you can use the sourdough bread to soak up the juicy yumminess!

Slow Cooked Lamb Shanks for dinner tonight!! 😋
Super simple easy recipe;
However many shanks you need
Ingredients:
2x cans of cream of mushroom soup (add another one if using 6 or more shanks)
2x packets of salt reduced French onion soup
2x tablespoons of Worcestershire sauce
1x onion halved
(I added only 1 of everything if cooking only 2 shanks)
Method:
Add all ingredients except shanks to the slow cooker and stir together
Trim all excess fat off shanks and brown in frying pan
Add shanks to the slow cooker and cook for 6-7 hours on low
The recipe does not need salt added to it
You can add chopped carrot and potatoes if you like, and serve with either mash or rice. Each to their own 😁😁
