Slow Cooker Chicken Cacciatore
Ingredients:
2 large boneless skinless chicken breasts
1 can whole peeled tomatoes(you can use chopped)
15 oz can tomato sauce
1/2 cup water
1 tsp basil
Medium chopped onion (I used shallots)
1 tsp oregano
4 cloves chopped garlic
1 tsp italian seasoning
About a cup sliced mushrooms
Medium size can sliced black olives
1 bell green pepper
Directions:
Cut chicken in chunks, coat chicken with flour. Add salt and pepper to flour first. In separate bowl pour can tomatoes and cut up tomatoes. Add can of tomato sauce, olives, basil, oregano, italian seasoning. Mix well
Pour olive oil in a pot just enough to cover bottom. Turn burner on medium high heat. When oil is hot add chicken. Cook 3 min on each side. Add chopped garlic, onion, and bell pepper. Saute about 3 minute. Add tomato sauce mixture. Bring to boil. Reduce heat to medium low. Cover and simmer for 1 hour to 1 1/2 hours stirring occasionally and when chicken is fully cooked. Serve over whatever pasta you like. I used egg noodles. You can add 1 chopped carrot. The carrot will reduce the acidity in sauce. If you don’t use carrot, add a little bit of sugar in the palm of your hand to sauce before cooking.
Sprinkle with parmesan cheese. Enjoy!!
