Slow Cooker Chinese Dumpling & Vegetable Soup… New invention in my slow cooker today 😃 and it worked out way better than I thought, was super tasty 😋 yum yum!
Ingredients:
1 litre Chinese dumpling soup base/stock
400g Pork & Chive Dumplings, defrosted
1 onion
1 carrot
1-2 sticks celery
1 small zucchini
1/2 medium red capsicum
2-3 cups shredded wombok/ cabbage
Hand full of snow peas
2-3 broccolini stems
1 Tbs chicken stock powder dissolved in 150ml boiling water
1 tsp crushed garlic
Sesame oil
Spring onion ( for garnish)
Method:
Prep and thinly slice all the vegetables.
Brown onion, carrot and celery in frying pan. Put in slow cooker.
Add zucchini, capsicum and 1/2 of the wombok, crushed garlic, dumpling soup base, and chicken stock to the Slow Cooker. Cook on low for 5 hrs.
Add the defrosted dumplings, snow peas, broccolini, and the remainder of wombok and continue to cook on low for 1-2 more hour. ( until dumplings are soft and cooked through).
Serve garnished with 3-4 drops of sesame oil and sliced spring onions in each bowl.
