Slow Cooker Pumpkin Soup. Fits my 5.5 litre cooker without spillage etc. As size matters, I’ve added weights to help. Cooking time 4-6 hours, depending on your cooker. Add cooking cream at beginning if you’re game. It’ll be fine
Ingredients:
1 sweet potato 450 gram
2 potato 400 gram
1/2 Kent pumplin 600 gram
1/2 Butternut pumpkin 600 gram
1 large onion
2 table spoon minced garlic
1 table spoon curry powder
1/2 tea spoon pepper
1 pack french onion soup mix
1.5 litres vegetable stock
300ml cooking cream
Directions:
Peel and dice up all the veges and add to pot with all other ingredients, except the cream.
Cook until veges are soft. I did 5 hours on high this time.
Add cream and blitz up with a stick blender.
Check salt content and add more to taste IF required.
Cook for a further hour with lid off. enjoy
