I just made Special Fried Rice in my slow cooker! It’s amazing!
Kate’s Fried Rice (I just experimented)
Ingredients:
2 cups of rice (I used Basmati)
4 cups of chicken or beef stock (I used stock cubes with boiled water from kettle)
4 tablespoons peanut or sesame oil (I used sesame)
1 large onion finely chopped
4 cloves of garlic
4 eggs
1/2 a packet of small frozen peas, carrots & corn (add whatever you like)
4 rashers of bacon thinly chopped
1 tablespoon of fish sauce
Soya sauce (a good splash)
Let’s see how to cook Slow Cooker Special Fried Rice
Directions:
Place dry rice in slow cooker
Add the stock and stir, add the oil, mix
Put on HIGH
Add frozen veggies, mix lid on
Fry off onions, garlic & bacon
Add the raw beaten egg in the cooker, mix well
Add onions, bacon mix well
Pour in the fish sauce & soya sauce
Cook on HIGH for 1 hour then fluff the rice
Lid on, stay on HIGH for about hour & half, check rice is cooked. If not, just keep checking,  Bon appetit! 😁
