Sweet & Sour Pork Rashers. This is one of our pork rasher dishes which was a major success with our children! Accompanied by brown rice and steamed broccolini to the high fives all round!
Ingredients

1kg pork rashers

3/4 cup sugar

1/2 cup salt reduced soy sauce

1/2 cup white vinegar
-
1 teaspoonful minced garlic, heaped.

1 teaspoon minced ginger minced heaped.

2 tablespoons yellow mustard.

1/2 cup tinned crushed pineapple.

1/2 red capsicum/pepper, sliced
-
1/2 green capsicum/ pepper, sliced.

Salt and Pepper to season

1 Tbsp oil to sear rashers with

Prepare the Pork
Cut rashes into thirds
Sear the Rashers
Seal rasher pieces with oil (searing in searing slow cooker (or pan on stove top) about 5-10mins.
Return to Slow Cooker
In case of using a stove return rash to slow cooker bowl after closing.
Add Vegetables
Add capsicum slices
Add Sauce Ingredients
Add all the other items and pour into pork and capsicums.
Cook
Cook on high for 4-5hrs
Thicken the Sauce
During the past hour I put The Tea Towel Trick in to give the sauce a touch of thickening.
Serve
With brown rice and broccolini that has been steamed.
Notes
Because of sugar content I just sprinkled the completed pork with a small amount of the sauce when serving, however, you can add as much as you prefer to your own.
