BBQ Pineapple Meatballs. A tasty meatball dish made with beef and pork. The meatballs are cooked in a sweet and sour sauce with pineapple.

Ingredients

  • 1/2 to 1/2-pound of ready-made, uncooked meatballs (you could also make them yourself)

  • 1 can (430 grams) of pineapple in juice.

  • 1 small brown onion, diced fine

  • 1 small green capsicum, chopped – could be red as well or both.

  • 1 cup BBQ sauce

  • 1/4 cup brown sugar

  • 1/4 cup soy sauce

  • 1 tsp garlic powder

  • 1 tsp dried parsley, chopped

  • Extra: may substitute cornflour and water to thicken sauce should you wish to do so.

  • Garnish: provided as an option: very thin sliced green onions/shallots.

BBQ Pineapple Meatballs: Instructions

  1. Put meatballs, pineapples, onion and capsicum in slow cooker.

  2. Pour and mix pineapple juice with other ingredients.

  3. Cook on low for 4 hours

  4. Can be served on rice, noodles or mashed potatoes and steamed vegetables.
