Ingredients

  • 1.5 kg chicken pieces

  • 3/4 tsp salt

  • 3/4 tsp ground black pepper

  • 1 medium onion, diced

  • 2 Tbsp garlic

  • 2 Tbsp chopped chili (I used 4 medium chilies)

  • 3 Tbsp tomato paste

  • 2 Tbsp paprika

  • 1 tsp ginger

  • 400 ml tin coconut cream

  • 3 Tbsp peanut butter

  • 1 Tbsp parsley

  • 1 Tbsp coriander (powdered)

  • 1 chicken stock cube

African Chicken in Coconut Sauce: Directions

  1. Put all ingredients in the slow cooker. Set it to low and cook for 2-3 hours.

  2. Take out the chicken. Remove the bones, then put the chicken back in the sauce.

  3. Take off the lid. Cook on high for 1 hour to make the sauce thick.

  4. Serve on a bed of basmati rice.
