Ingredients

  • 1 sheet puff pastry (use more sheets for extra parcels)

  • 1 strip bacon, cut in half with rind off

  • 1 chicken thigh without skin

  • 1 small tub Philly cream cheese with chive and onion (from a pack of 4)

  • Handful baby spinach leaves

  • Sun-dried tomato halves (drain oil on paper towel)

  • Half handful pine nuts

  • Sprinkle black pepper

Chicken & Bacon Pastry Parcel: Directions

  1. Spread out the puff pastry sheet flat.

  2. Put bacon pieces on top.

  3. Place the chicken thigh flat over the bacon.

  4. Spread cream cheese evenly all over the chicken.

  5. Add baby spinach, sun-dried tomatoes, pine nuts, and pepper on top.

  6. Roll it up tight and put it on baking paper in your slow cooker.

  7. Tuck a tea towel under the lid and cook on low for 3 hours.

  8. Take it out and bake in a hot oven at 180°C for 20 minutes to make it golden (if you want).
