1 tbsp olive oil

2-3 chicken breasts

150g chorizo

250g long grain rice

400g tin chopped tomatoes

350ml chicken stock

1 red onion, diced

1 of each red & green capsicum/bell peppers, diced

2 cloves of garlic, diced/crushed

1 tbsp Cajun seasoning
Jambalaya: Instructions

Heat the oil in a pan and cook the chicken until it’s golden brown. Put it in the slow cooker.

Dump in all the other stuff and stir it up good.

Set the slow cooker on high for 4 hours. Stir now and then so rice doesn’t stick.

About halfway, if it looks dry, add extra stock. That’s up to you!
