Ingredients
- 5 chicken breast fillets
- 10 large fresh basil leaves
- Camembert cheese — about 50g
- 1 can (400g) crushed tomatoes
- Toothpicks (to hold the pockets shut)
Camembert & Basil Breast Pockets: Directions
- Put the chicken fillets flat on a cutting board. Use a knife to carefully cut a small pocket opening into the top of each piece of chicken.
- Push 2 basil leaves and a small piece of Camembert cheese inside each pocket.
- Use toothpicks to close the pocket so the filling stays inside while it cooks.
- Pour the crushed tomatoes into the bottom of your slow cooker. Carefully place each stuffed chicken breast on top of the tomatoes.
- Put the lid on and cook on HIGH for 2.5 hours, or until the chicken is fully cooked all the way through.
- Before you serve, take out all the toothpicks carefully. Spoon the warm tomato sauce from the bottom of the slow cooker over each piece of chicken.
- Enjoy your soft and juicy chicken with rice, vegetables, or a fresh salad — and dig in!
