Naked Chicken Parmigiana 🍗. This is a super simple slow cooker meal that tastes just like chicken parmigiana — but without the crispy crumb coating. Ingredients

  • 1kg chicken thigh fillets
  • 1 bottle (500g) Napoletana or Parmigiana sauce (chunky tomato with herbs works great!)
  • 200g grated mozzarella cheese

Naked Chicken Parmigiana: Directions

  1. Put the raw chicken thigh fillets straight into the bottom of your slow cooker.
  2. Pour the tomato sauce all over the chicken so it’s nicely covered.
  3. Cover it with a lid and let it cook on low heat for 4 hours.
  4. (Optional) Once the chicken is cooked, scoop out some of the extra liquid sitting in the slow cooker — this helps the cheese stick better and not go watery.
  5. Sprinkle the grated mozzarella cheese generously over the top of the chicken.
  6. Place a clean tea towel under the lid of the slow cooker (this soaks up the steam so the cheese melts nicely instead of going soggy). Cook for another 15 minutes or until the cheese is fully melted and gooey.
