Ingredients

  • 5 chicken breast fillets
  • 10 large fresh basil leaves
  • Camembert cheese — about 50g
  • 1 can (400g) crushed tomatoes
  • Toothpicks (to hold the pockets shut)

Camembert & Basil Breast Pockets: Directions

  1. Put the chicken fillets flat on a cutting board. Use a knife to carefully cut a small pocket opening into the top of each piece of chicken.
  2. Push 2 basil leaves and a small piece of Camembert cheese inside each pocket.
  3. Use toothpicks to close the pocket so the filling stays inside while it cooks.
  4. Pour the crushed tomatoes into the bottom of your slow cooker. Carefully place each stuffed chicken breast on top of the tomatoes.
  5. Put the lid on and cook on HIGH for 2.5 hours, or until the chicken is fully cooked all the way through.
  6. Before you serve, take out all the toothpicks carefully. Spoon the warm tomato sauce from the bottom of the slow cooker over each piece of chicken.
  7. Enjoy your soft and juicy chicken with rice, vegetables, or a fresh salad — and dig in!
