1 can (270ml) coconut cream

2 tablespoons beef stock powder

1 tablespoon brown sugar

3 tablespoons curry powder (see notes below)

1 can (400g) chopped tomatoes

To Finish

300ml cream mixed with 2 tablespoons cornflour (stir it smooth)

Put all ingredients (except the cream-cornflour mix) in your slow cooker.

Cook on low heat for 6 hours.

Stir in the cream-cornflour mix.

Cook for 1 more hour.

Notes
Change the curry amount to make it just right for your taste. I began with 1 tablespoon of curry powder and added more bit by bit until it was spicy enough. 😊 The cream at the end makes it softer and super creamy!
