Ingredients

2 cups chunky frozen vegetable mix (carrots, cauliflower, beans)

1 cup chunky diced sweet potato

2 cups broccoli florets

1/2 cup frozen peas and corn

200 g diced bacon

1 tsp garlic powder

Salt and pepper to taste

250 ml cream

2 tsp cornflour
-
3/4 cup grated tasty or cheddar cheese
Cheese & Bacon Vegetable Bake: Directions

Put all the vegetables and the diced bacon into the slow cooker. Toss them together so they mix well.

In a bowl, whisk the garlic powder, a little salt and pepper, the cream, and the cornflour until smooth.

Pour the smooth, creamy sauce over the vegetables and bacon in the slow cooker.

Cook on high for 2 hours, then switch to low and cook for another 2 hours.

In the last 15 minutes of cooking, sprinkle the grated cheese over the top so it melts and becomes golden.
