Chicken Soup With Noodles…
Our home is full of coughing, snotty people at the moment. I think it’s true what they say, chicken soup really does make you feel better.
Ingredients:
4 x chicken thighs, sliced
2 x carrots
2 x sticks of celery
1 x onion, diced
1 Liter x liquid vegetable stock
3 Liter x water
Salt & pepper to taste
Rice drop noodles (or whatever type of noodles you like)
Spring onion and parsley to garnish
Method:
Cook off onion, celery and carrots in a frypan with a little oil, until onion starts to become translucent. Add to slow cooker.
Add chicken (raw) to slow cooker.
Add stock and water to slow cooker.
Cook on low for 8 hours.
Allow to cool, skim fat/gunk off the top.
Heat up portions as you need them, adding rice noodles and garnish. Season to taste.
Freeze left over portions for a rainy day.

- Question…. Yum!! May I ask where you get rice drop noodles from? They look really good! Are they gluten free?
Answer….. The noodles have corn flour in them, from memory. I don’t know if that is ok or not for GF diets? I just buy them from our local asian grocery store, they come in 1kg pre-cooked bags. 🙂
2. Question….. With this recipe do you put the noodles in when you serve it or at the beginning before you start cooking?
Answer…… Hi, I buy the rice noodles already precooked from our local asian grocery store, so they really just need to be heated through before serving. I pop them in the slow cooker roughly 20 mins before serving.
