2 chicken breasts (no skin)

1 tbsp olive oil or coconut oil

1 lemon (squeeze juice and grate peel)

Salt and black pepper (to taste)

A small bit of butter

1 small onion (chop fine)

1 chili (no seeds, chop fine)

2 tsp curry powder

2 tbsp tomato paste

100 ml white wine (dry kind)

100 ml chicken broth

1 tbsp apricot jam

150 ml mayo

75 ml sour cream

1 big mango (peel, cut up)

2 tbsp fresh cilantro (chopped) or dried

Dash of Tabasco (if you like heat)

50g flaked almonds (toast in dry pan)

1 heaped tsp cornstarch (mix with water)
Coronation Chicken: Instructions

Put everything in slow cooker, except mango. Add cornstarch mix to keep cream smooth.

Stir well.

Cook on low for 4 hours. Stir 1-2 times.

Add mango for the last 20 minutes to warm up.

Top with almonds and cilantro. Serve with rice and salad. So tasty!
