This Lamb Chop Stew is a warm and filling slow cooker meal. Tender lamb chops cook with vegetables in a rich gravy. It is a simple and comforting dish perfect for family dinner. Bowl after bowl of absolute comfort food!

Ingredients

  • 1 – 1.5 kg lamb neck chops

  • 1 large sliced onion

  • 1 sachet French onion soup

  • 2 stalks celery, sliced

  • 2 large carrots, sliced

  • 2 large potatoes, cubed

  • 1 small wedge of cabbage

  • 12 mini mixed capsicums, small and chopped.

  • 1 bunch broccolini, stalks sliced.

  • 6 tbsp gravy powder

Lamb Chop Stew: Instructions

  1. Place onion slices in cooker and place chops on top of onion.

  2. Add sprinkle chops to the soup mix and only 3 tbsps of the gravy powder (the other 3 will be used at the end of the recipe).

  3. Add vegetables.

  4. Cook on low for 8hrs.

  5. Combine the rest of the 3tbsp of gravy powder with some water and place into slow cooker. I then removed the lid to allow the dish to be thinned down after 10 minutes before it was served.
