Ingredients
- 4 chicken thigh fillets
- 2 big spoonfuls of Lemon & Herb bone broth concentrate (Meadow and Marrow brand works great — available online)
- ¼ lemon, cut into 2 small wedges
- 2 tsp cracked black pepper
- ½ cup water
Lemon & Herb Shredded Chicken: Directions
- Put all your ingredients into a 1.5L slow cooker.
- Set it to low and let it cook for 3 hours.
- Take out the lemon pieces and throw them away.
- Take the chicken out of the soup and use two forks to pull it into small pieces.
- Use your shredded chicken in salads, sandwiches, tacos, or as a pizza topping!
- Eat within 48 hours or freeze in small portions for later.
