Ingredients

  • 4 chicken thigh fillets
  • 2 big spoonfuls of Lemon & Herb bone broth concentrate (Meadow and Marrow brand works great — available online)
  • ¼ lemon, cut into 2 small wedges
  • 2 tsp cracked black pepper
  • ½ cup water

Lemon & Herb Shredded Chicken: Directions

  1. Put all your ingredients into a 1.5L slow cooker.
  2. Set it to low and let it cook for 3 hours.
  3. Take out the lemon pieces and throw them away.
  4. Take the chicken out of the soup and use two forks to pull it into small pieces.
  5. Use your shredded chicken in salads, sandwiches, tacos, or as a pizza topping!
  6. Eat within 48 hours or freeze in small portions for later.
  7. Don’t throw away the broth! Heat it up and drink it warm — it’s packed with nutrients and tastes amazing!
