This Rich Sausage Hot Pot is a warm, filling meal made in the slow cooker. Beef sausages cook with potatoes, carrots, and peas in a tasty tomato soup sauce. It’s simple to make, needs little prep time, and turns into a soft, yummy dinner your whole family will enjoy.

Ingredients
- 12 thin beef sausages
- 4–6 small baby potatoes, washed, skin left on
- 3 medium carrots, sliced
- 1 cup frozen peas
- 1 x 400g can condensed tomato soup
- 1 x 40g packet dry French onion soup mix
- 1 tablespoon Worcestershire sauce
- ½ cup warm water
Rich Sausage Hot Pot: Instructions
- Wash the small baby potatoes well, then cut each one into about 6 small pieces. Keeping the pieces small helps them cook all the way through and turn soft.
- Place the cut potatoes into the slow cooker. Add the sliced carrots and frozen peas on top.
- Cut each beef sausage into four smaller pieces, then add all the sausage pieces into the slow cooker with the vegetables.
- In a bowl, mix together the condensed tomato soup, dry French onion soup mix, Worcestershire sauce, and warm water until it’s smooth and well combined.
- Pour the soup mixture evenly over the sausages and vegetables in the slow cooker.
- Gently stir everything together so the sausages and vegetables are coated in the sauce.
- Put the lid on and cook on HIGH for 2 hours, then turn it down to LOW and cook for another 4 hours. This equals about 6 hours total if using the auto setting.
- If you like a longer, slower cook, you can also cook it on LOW the whole time for about 7 to 8 hours instead.
- Once the sausages are cooked through and the vegetables are soft, turn off the slow cooker.
- Serve the hot pot warm, with steamed broccoli on the side if you like.
