This creamy Slow Cooker Supercharged Satay Chicken is packed with rich peanut flavor and a hint of spice. Juicy chicken thighs cook slowly in a thick coconut peanut sauce, making a comforting dinner the whole family will love. Simple to make and even simpler to enjoy over rice.

This is, without a doubt, my favorite recipe from book 5 — I even cooked this one live on the Today Show!

Ingredients

  • 1.25 kg chicken thigh fillets, cut into strips
  • 1 medium brown onion, chopped small
  • 1 heaped teaspoon minced garlic
  • 1 can (270g) full-fat coconut cream
  • 1 cup crunchy peanut butter
  • 2 teaspoons cornflour
  • 1 small red chilli, seeds removed and chopped small
  • 80 ml kecap manis (sweet soy sauce)
  • 2 teaspoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon fish sauce

Slow Cooker Supercharged Satay Chicken: Instructions

  1. Put the chicken strips, chopped onion, and minced garlic into a searing slow cooker, or a regular frying pan if your slow cooker doesn’t sear. Cook for 5 to 10 minutes, just until the outside of the chicken looks sealed and the onion starts to soften. You don’t need to fully brown the chicken.
  2. In a large jug, add the coconut cream, peanut butter, cornflour, chopped chilli, kecap manis, soy sauce, brown sugar, and fish sauce. Use a stick mixer or blender to mix everything together until smooth and well combined.
  3. Pour this sauce mixture over the chicken, onion, and garlic in the slow cooker. If you cooked the chicken in a frying pan, carefully move everything into the slow cooker now.
  4. Cover the slow cooker with its lid. For extra thickness, place a folded tea towel under the lid to catch extra moisture. Cook on low heat for 2.5 hours, until the chicken is soft and the sauce has thickened nicely.
  5. Once cooked, give the sauce a good stir to make sure everything is well mixed. Serve hot over warm brown rice.

Notes

  • This recipe makes a thick, strong-tasting satay sauce. If you don’t want such a strong peanut flavor, you can use only ½ cup of peanut butter instead. Our family loved it with the full amount though!
  • You can also use smooth peanut butter instead of crunchy if you like. For extra crunch, sprinkle some crushed peanuts on top before serving.
  • The small chilli, with the seeds taken out, wasn’t spicy at all. Even our 5-year-old ate it happily with no problems.
