Slow Cooker Duck Breast Recipe
I halved the recipe for 2 servings and added extra ginger. I used;
Ingredients:
2 duck breasts
4 slices from a large orange
2 tablespoon soy sauce
2 tablespoon honey
1 1/2 tablespoon cornflour (mixed with the orange juice)
1 Teaspoon Frozen chopped garlic (recipe suggests 2 fresh crushed cloves)
100ml long life orange juice from concentrate
1 teaspoon frozen chopped chilli
I teaspoon ground ginger salt pepper to taste
I added 1 teaspoon chopped frozen ginger
Method:
Score skin of duck breasts in cross pattern
Heat non stick pan on high and sear duck, skin side down approx. 4 minutes
Arrange orange slices in slow cooker
Place duck breasts on top add remaining ingredients and cook on LOW for 2-3 hours
Serve with salad/ green veg and mini roasties. I used some of the rendered duck fat, a splash of garlic olive oil and chopped fresh rosemary to crushed, par boiled new pots. Cook at 190 degrees (180 fan) for 25 minutes until crispy. Season well.
