Slow Cooker Plum Gravy Brisket
Cook Time: 8 hours
Servings: 6
Ingredients
- 1.5 kg beef brisket
- 175 grams plum jam
- 2–3 tbsp of your favourite gravy powder (Maggi Rich Gravy Mix works great)
Instructions
- Place the beef brisket into the bottom of your slow cooker, making sure it sits flat.
- Put the plum jam in a small bowl and heat it in the microwave for about 1 minute. This makes the jam soft and easy to spread. Using a pastry brush or the back of a spoon, spread the warm jam evenly all over the top of the brisket.
- Sprinkle just 2 tablespoons of the dry gravy powder over the top of the jam-covered brisket. Save the last spoonful of gravy powder for later, since you’ll use it to thicken the gravy at the end.
- Put the lid on the slow cooker and cook on LOW for 8 hours, until the meat is very soft and falls apart easily when you touch it with a fork.
- Note: If your piece of brisket is more round and thick instead of flat, you might need to add 1 to 2 extra hours of cooking time. If you’re short on time, you can cook it on HIGH for 5 to 6 hours instead. Just make sure the meat is soft enough to easily pull apart before serving.
- Once the brisket is fully cooked, carefully lift it out of the slow cooker and place it on a cutting board. Slice the meat into thin pieces.
- While you’re slicing the meat, pour the leftover juices from the slow cooker into a small saucepan. Put the pot on the stove and turn the heat up high.
- Add the last spoonful of gravy powder into the hot juices. Whisk it well while it cooks, until the gravy turns thick and rich.
- Serve the thin brisket slices on top of a bed of creamy mashed potatoes. Add steamed green beans and roasted baby carrots on the side. Pour the warm, tasty gravy over everything before serving.
