Spanish Chicken. This easy Spanish Chicken is packed with bold, smoky flavors and comes together with very little work. Juicy chicken drumsticks slow-cook with chorizo, fresh veggies, and olives in a rich tomato sauce. It is a perfect low-carb meal the whole family will love.

Ingredients
- 2 tsp olive oil
- 1 chorizo sausage, cut in half the long way, then sliced into pieces
- 1 red onion, sliced
- 1.5kg chicken drumsticks
- 400g can of cherry tomatoes in juice
- 1 red capsicum, sliced
- 2 tsp smoked paprika
- 1/2 cup chicken stock
- 100g mixed green and black pitted olives
Spanish Chicken: Directions
- Using a searing slow cooker or a fry pan, cook the onion and chorizo in olive oil for about 5 to 10 minutes until they start to brown.
- Place the cooked onion and chorizo into the slow cooker. Add in all the other ingredients from the list, but do not add the olives yet.
- Put the lid on and cook everything on low heat for 5 hours.
- After 5 hours, add the olives into the slow cooker. Let everything cook together for another 30 minutes.
- Serve hot over couscous and enjoy.
Notes
- This recipe has a little bit of a spicy kick to it. If you are making this for young kids, you can simply leave the chorizo and olives off their plates when you serve it.
- This meal is low-carb friendly, making it a great choice if you are watching your carbs.
