Chicken Roll in Apricot Sauce. This juicy chicken roll is wrapped in crispy bacon and cooked low and slow in a sweet apricot sauce. It is stuffed with creamy cheese, soft brie, sun-dried tomatoes, roasted capsicum, and fresh spinach. Every bite is full of flavour and so easy to make in a slow cooker. You can swap the herb cream cheese for plain cream cheese if you like. You can also add other fillings inside the roll. It helps to cut the rind off the bacon before you start.

Ingredients
- 500 grams chicken mince
- 1 egg
- 1 teaspoon mixed herbs
- 1/2 cup stuffing mix or breadcrumbs
- 200 to 250 grams herb cream cheese, or plain cream cheese
- 1/2 roll double brie, cut into slices
- 1/4 cup sun dried tomatoes
- 1/4 cup roasted capsicum, cut into slices
- A small handful of fresh spinach
- 4 to 5 bacon rashers
- 1 can apricot nectar
- 1 packet French onion soup mix
Chicken Roll in Apricot Sauce: Directions
- Put the chicken mince, egg, stuffing mix, and mixed herbs into a bowl. Mix them all together well and then put the bowl to the side.
- Lay your bacon rashers flat on a clean surface. Spread the chicken mixture on top of the bacon. Try to spread it over at least half of each rasher.
- Spread the cream cheese over the chicken layer in a strip about one and a half inches wide. Then lay the brie slices on top. After that, add the sun-dried tomatoes, roasted capsicum, and fresh spinach on top.
- Slowly and gently roll everything up. Use the bacon to help hold the roll together. Press the ends closed using the chicken mixture. Place the roll carefully into your slow cooker.
- Mix the apricot nectar and French onion soup mix together in a bowl or jug. Pour this mixture all over the chicken roll in the slow cooker.
- Put the lid on the slow cooker and cook on low heat for 4 to 5 hours. Serve warm and enjoy.
