Ingredients
-
120 grams self-rising flour
-
120 grams butter (plus extra to grease the bowl)
-
120 grams golden caster sugar
-
1 tsp ground ginger
-
1/2 tsp baking powder
-
2 large eggs, beaten
-
1 tbsp milk
-
3 pieces stem ginger in syrup (chop them up, plus about 1 tbsp of the syrup)
-
1 tbsp golden syrup
-
1 liter Pyrex bowl
-
Square of foil with a fold in the center
-
2 tbsp golden syrup (to drizzle on top when done)
Steamed Sponge Pudding: Directions
-
Rub lots of butter inside the Pyrex bowl. Add chopped stem ginger, its syrup, and 1 tbsp golden syrup. Set it aside.
-
In a bowl, sift flour, ground ginger, and baking powder together.
-
Mix in butter, beaten eggs, and milk. Use an electric mixer until it’s smooth and creamy.
-
Pour the batter into the bowl. Smooth the top flat.
-
Cover with foil. Make a pleat (fold) in the middle so the pudding can grow big while cooking. Tie string around the edge to hold it tight.
-
Put the bowl in the slow cooker. Add boiling water up the sides about 2 inches deep.
-
Cook on high for 2 hours.
-
Lift the bowl out carefully.
-
Take off the foil. Slide a knife around the edges to loosen it. Flip onto a plate.
-
Drizzle 2 tbsp golden syrup on top for extra yum!
