Ingredients

  • 120 grams self-rising flour

  • 120 grams butter (plus extra to grease the bowl)

  • 120 grams golden caster sugar

  • 1 tsp ground ginger

  • 1/2 tsp baking powder

  • 2 large eggs, beaten

  • 1 tbsp milk

  • 3 pieces stem ginger in syrup (chop them up, plus about 1 tbsp of the syrup)

  • 1 tbsp golden syrup

  • 1 liter Pyrex bowl

  • Square of foil with a fold in the center

  • 2 tbsp golden syrup (to drizzle on top when done)

Steamed Sponge Pudding: Directions

  1. Rub lots of butter inside the Pyrex bowl. Add chopped stem ginger, its syrup, and 1 tbsp golden syrup. Set it aside.

  2. In a bowl, sift flour, ground ginger, and baking powder together.

  3. Mix in butter, beaten eggs, and milk. Use an electric mixer until it’s smooth and creamy.

  4. Pour the batter into the bowl. Smooth the top flat.

  5. Cover with foil. Make a pleat (fold) in the middle so the pudding can grow big while cooking. Tie string around the edge to hold it tight.

  6. Put the bowl in the slow cooker. Add boiling water up the sides about 2 inches deep.

  7. Cook on high for 2 hours.

  8. Lift the bowl out carefully.

  9. Take off the foil. Slide a knife around the edges to loosen it. Flip onto a plate.

  10. Drizzle 2 tbsp golden syrup on top for extra yum!
