Ingredients

  • 3 medium potatoes, peeled and cut into 1 cm pieces

  • 200 grams pumpkin, cut into 1 cm pieces

  • 2 big mushrooms, cut into 1 cm pieces

  • 2 carrots, cut into 1 cm pieces

  • 1 cup green onions or scallions, sliced into 1 cm pieces

  • 2 small onions, chopped roughly

  • 1/4 cup dried peas

  • 1 clove garlic, crushed fresh

  • 2 teaspoons olive oil

  • 2 teaspoons Moroccan seasoning

Moroccan Vegetable Medley: Directions

  1. Put the potatoes, pumpkin, carrots, onions, garlic, Moroccan seasoning, and olive oil in your slow cooker on HIGH. Mix them up well. Put the lid on and cook for 1 hour and 30 minutes, until potatoes start to get soft on the edges. Stir gently if you can.

  2. Add the peas and mushrooms. Stir very gently. Put the lid back on and cook on HIGH for 1 more hour.

  3. Add the green onions and stir gently again. Put the lid on and cook on HIGH for 30 more minutes.
