Sweet & Sour Chicken. You just chop a few things, put them in the slow cooker, and let it do all the work. It comes out soft, saucy, and full of yummy flavor. A perfect easy dinner for busy days when you still want something tasty!

Ingredients
- 750g–1kg chicken breast, cut into small bite-sized pieces
- 1 head of broccoli, cut into small florets
- 1 red bell pepper, cut into small pieces
- 1 small brown onion, cut into quarters
- 1 jar Sweet & Sour sauce (like Kan Tong brand)
- 1 jar Chinese Barbecue sauce (like Kan Tong brand)

- Cut the chicken breast into small, even pieces so it cooks evenly.
- Chop the broccoli into small florets, cut the capsicum into bite-size chunks, and quarter the onion.
- Put the chicken, broccoli, capsicum, and onion into the slow cooker.
- Pour in the whole jar of Sweet & Sour sauce and the whole jar of Chinese Barbecue sauce.
- Stir everything together gently so all the pieces are coated in sauce.
- Put the lid on the slow cooker and set it to Low for 4 hours.
- Use the tea towel trick: place a folded tea towel under the lid to catch extra water drops and stop the food from getting too watery.
- After 4 hours, check that the chicken is fully cooked and tender.
- Give it one more gentle stir before serving.
- Serve hot with a scoop of rice on the side.
Notes
- You can use two jars of Sweet & Sour sauce instead of one Sweet & Sour and one Chinese Barbecue sauce.
- If you like your veggies a bit crunchy instead of soft, add the broccoli and capsicum after the chicken has cooked for 2 hours, instead of adding them at the start.
