TRIPLE CHEESE AND CHICKEN GNOCCHI

TRIPLE CHEESE AND CHICKEN GNOCCHI

TRIPLE CHEESE AND CHICKEN GNOCCHI – our treat and experiment for the week.

Ingredients:
-one leek sliced thinly
– half a BBQ chicken or 500gms grilled chicken with your chose of herbs
-200grams bacon diced
-200grams beans
-200grams spinach
-500grams gnocchi I used spinach and cheese flavoured
– 60grams butter
– 50grams plain flour
– 40grams parm
-2 cloves garlic crushed
-50grams favourite cheese I used Colby
-500mls milk

Method:
– cook gnocchi as per pack, drain and put in slow cooker

– fry leek, garlic and bacon until golden
– add chicken, beans, and spinach, cook until just wilted, add to slow cooker

-melt butter over a medium heat, slowly stir in flour.
– remove from heat, gradually add milk
– return to a medium heat until the mixture boils and starts to thicken
– stir through Parmesan

– pour over mixture, then stir till just combine.

-sprinkle remaining cheese over the top.

I’m cooking on high for 1.5hrs with a tea towel under the lid, then in the oven for 10 to crisp. Will post in comments when done.

Serve with salad or fill your plate to the brim

Turned out beautifully! Served with fresh chives and a pinch of Parmesan.
Maybe a bit more sauce next time.
